- 1 whole large mango cut into cubes and frozen
- 1 can full fat coconut milk
- 3 tbsp coconut nectar (you can substitute for coconut sugar or pure maple syrup)
- zest of one lime
This is super simple and perfect for those sunny Spring/Summer days!
Place all ingredients, but only half the lime zest, into a blender or food processor, blend until silky smooth. Pour the mixture into a tupperware or loaf tin, cover and pop into the freezer. leave for one hour and then take out and use a fork to stir and fluff the mixture, place back in the freezer and leave for another 2 hours. When ready to serve take out of the freezer for 5mins and then use a fork once again to scrape and fluff the mixture this brakes down the larger ice particles. Use an ice cream scoop to serve and grate over the rest of the lime zest.
