200g ground almonds
250g dates (the stickier the better) try the Medjool dates from Tesco
2 tbsp cacao powder
Small sprinkle of salt
Chopped roasted hazelnuts
1 tsp vanilla extract
De pit your dates and then add everything apart from the hazelnuts to a food processor/blender.
Keep pulsing on a high level until the mixture starts to form a sticky dough. This may take a bit of time depending on how powerful the mixer is. Try a piece, if you want it more chocolatey then add a teaspoon of cacao and pulse again.
Once a sticky dough is formed roll out the balls, I made 10 large ones, then roll into chopped roasted hazelnuts. I loved them as simple as this but you can always push a whole hazelnut into the centre of the ball to jazz it up.
Store in an airtight container in the fridge.
